OK, you've convinced me. I need that scholarship! That Eggplant Parmesan looks to die for. Salting and draining ... who knew? (Well you, obviously.)

I grew up on canned green beans and casseroles. I didn't exactly have any stellar examples in the kitchen, so my cooking has all been self-taught. I LOVE ATK and have been coveting your scholarship, so I think you should pick me. My family will thank you.
Oh, I got so busy telling you my childhood woes that I forgot to tell you how much I want to try that eggplant parmesan. Seriously, though, my very first recipe box was filled only with casseroles and nasty versions of baked goods... exept for a yummy cookie recipe that is the only good recipe I learned growing up. (I sure hope my mom doesn't stumble upon your blog, hee hee!) :-)
So fun to see you really use that beautiful kitchen. I really regret that I wasn't good at feeding my family more veggies. Never too late to learn how. ATK is my go to for baking and meats - need to learn more veggies.

How neat! That would be a blast and a half for me! I always love a good eggplant recipe! Husband doesn't normally like eggplant, but I'm determined to find a winner that he'll love. And I never knew artichokes could look so pretty! I've never tried to make anything with them, but those actually look delicious :)
I love ATK, too. Every new cooking success I've had this past few years have been directly attributed to them. I would love to win!
